Kolache

Ingredients:

2 pkgs. active dry yeast

2 cups warm milk

½ cup sugar, plus 1 Tbls.

½ cup lard

2 tsps. salt

4 egg yolks

5-6 cups flour

1 egg white, beaten

Canned fruit for toppings (apricot, cherry, poppyseed, etc.)

Directions:

Combine milk, 1 Tbls. sugar, and yeast and allow it to dissolve. In a large bowl, stir together the remaining sugar, 3 cups flour, egg yolks, salt, lard, and yeast mixture. Combine together and add flour as necessary to form a stiff dough.

On a lightly floured surface, knead the dough until smooth and elastic, about 7-8 minutes, adding additional flour as needed.

Place the dough in a large greased bowl, turning such that all surfaces are greased. Cover with a kitchen towel and set in a warm place. Let rise for about 1 hour.

Punch dough the down and allow to rise again for about another hour.

Remove the dough, form into 24 balls, and place onto greased baking sheets. Allow to rise one more time for 45 minutes to an hour.

Press an indentation in center of each ball and stretch out so that each kolache measures about 4” in diameter. Fill each kolache with about a tablespoon of filling. Brush dough with egg white.

Bake at 350 degrees for about 12 minutes or until golden brown.
